This healthy cucumber juice recipe is an easy way of getting the goodness in! Made with three ingredients, my recipe also includes lemon and mint for a refreshing and zingy drink.

You really only need cucumbers and water to make cucumber juice, but I like adding lemons and mint for their added nutritional benefits and flavor.
How to make cucumber juice
Place all of the ingredients into a food processor or in a blender, and blend the ingredients until smooth. There is an option al step to strain the juice through a fine sieve and into a pitcher or bowl, but it’s not necessary if you have a strong blender.

Instructions
- Slice off the ends of the cucumbers and peel. Chop into a few larger pieces.
- Place the cucumbers, water, lemon zest, lemon juice and mint in a food processor or in a blender. Blend the ingredients for 2-3 minutes until smooth.
- Set a strainer over a larger bowl and pour the cucumber juice into the strainer. Use a spatula to move the juice through the strainer until no more juice strains out. Discard the solids.
- Enjoy the cucumber juice immediately, or store in fridge for up to 24 hours.

Storage: Store any leftovers in an airtight mason jar. It will stay fresh for up to 24 hours. But ideally, it’s best to consume immediately after blending. Equipment: I use my Vitamix blender to make my smoothies. It has a “smoothie” button so it does all the work for me until the ingredients are well blended.
